Guest pizza – Leicestershire Woodland Mushrooms and Cotswold Gold Truffle oil

Veganuary just got healthier, tastier and easier! Kick-off your plant-based diet this month with our delicious new guest pizza. Alternatively, swap out the vegan mozzarella for our delicious fior di latte mozzarella and enjoy it veggie!

Bianca (white) pizza with no tomato sauce, layered with our scrumptious vegan mozzarella cheese made from coconut oil, followed by vitamin bursting Leicestershire woodland mushrooms, drizzled with decadent Cotswold Gold truffle oil, and finally a healthy sprinkling of vegan parmesan.

We source our woodland mushrooms fresh from the Livesey Brothers’ woodland estate, a third-generation family-run farm a stone throw away from us in the heart of the national forest, Leicestershire. The farm has continuously developed over the past 36 years and now houses 50 specialists growing rooms, cultivating six different varieties of woodland and exotic mushrooms. Bursting with vitamin B and D goodness, this makes this guest pizza one of the healthiest we’ve ever crafted!

The Oyster

Back in 1985, oyster mushrooms were a rare commodity in the UK. But thanks to the foresight – and penchant for the exotic – shared by brothers Tom and Simon Livesey. The brothers persevered to become the nation’s leading producer of woodland mushrooms. Oyster mushrooms are known for their wide, flat caps with delicate pure white gills with its soft bite and delicate flavour. They are called the oyster mushroom due to their caps resembling the shape of an oysters shell, containing all of the essential amino acids needed for a healthy diet.

The Maitake

Otherwise known as Grifola frondosa, is a polypore mushroom, a unique mushroom and recognisable by its unusual fronds, giving it a floral appearance. It has a very rich, savoury taste, which adds extra zest to dishes. Complemented by our Vegan parmesan to bring out the true flavour of this mushroom.

The Shiitake

Livesey Brothers have been growing Shiitake Mushrooms for many years.

Shiitake is known for its dark brown and umbrella shaped caps, they are often covered with white flecks, which shows that the mushroom is fresh and perfect to eat. Shiitake Mushrooms have a meaty texture and a rich, earthy flavour, and have high levels of B vitamins, which assist in the daily function of our bodies and assists in releasing energy from the foods that we eat.

The Eryngi

The Eryngi is also known as the king oyster, the Eryngii mushroom is a very unique shape and comes in a variety of sizes. The Eryngi is extremely delicious and has an incredible texture, giving it the ability to absorb and carry flavour combinations. The Eryngi is a great substitution for meat, making it a great addition to our plant based pizza.

We complement this array of woodland mushrooms, with a vegan style parmesan, and mozzarella cheese finished with a touch of Cotswold Gold’s white truffle oil made from high-quality Italian truffles that gives a strong earthy flavour to add a decadent finish to our Vegan Guest pizza this January.
